Baby Chicken and Carrot Soup

Ingredients

  • 100g of potato (half a medium potato approx.)
  • 100g of broccoli (half a small broccoli approx.)
  • 100g carrot (one medium carrot)
  • Half an onion
  • 100g of chicken breast
  • A drizzle of extra virgin olive oil

How to make chicken and vegetable soup

  1. Peel the onion and carrot and wash the broccoli well. Chop everything into very small pieces.
  2. Put a saucepan on the fire with a drizzle of olive oil and when it is hot add the onion, carrot and broccoli. Sauté for 5 minutes over medium heat, stirring constantly, until the onion is lightly golden.
  3. Add 750ml of water or vegetable broth to the saucepan and turn up the heat until it starts to boil. Then leave it cooking over medium heat.
  4. Peel the potato and cut it into four large pieces, add it to the saucepan and cook for 20 minutes.
  5. The chicken cooks very quickly so add it when there are only 5 minutes left to cook.
  6. When the potato is tender, turn off the heat and remove it from the saucepan along with the chicken. Mash the potato well with a fork and add it back to the soup, this will thicken the broth. Cut the chicken into small pieces with scissors and add it to the soup as well. Stir well.
  7. Wait until it is warm and serve it in a deep plate. It is ready to eat!

Tricks and tips

  • The truth is that this soup can be made with any vegetable you have on hand: pumpkin, green beans, zucchini, peas, mashed chickpeas, etc.
  • Prepare this soup with the remains of vegetables, potatoes, chicken and broth from the stew (if it is not too salty) your baby will not leave a drop!
  • Adapt the size of the pieces in the soup to the age of your baby. You can make them bigger as they turn months and chew better.
