Swiss chard with tomato and egg

1. The first thing you have to do is remove the stem from the chard to only use the leaves. Then, bring a pot with enough water over medium heat and, when it boils, cook the chard leaves for a maximum of 5-8 minutes so that they soften. Remove the vegetables from the water and cut the cooking with cold water.

2. Cut the onion into very fine squares, put a frying pan over medium heat and add a little olive oil to fry the onion with garlic paste, salt and black pepper.

3. Add the finely chopped Serrano ham and mix well with the sautéed onion. This ingredient is optional, you can use it, remove it from the recipe or substitute it for another such as bacon. The possibilities for preparing sautéed chard are endless!

4. Add the peeled tomatoes and incorporate the recipe ingredients well.

5. Ideally, you should have a sauce like the one seen in the photograph. Now, add the white wine and lower the heat to continue preparing the chard with egg recipe.

6. While the sauce is finished over low heat, cook the poached eggs. To do this, you will need to cut four squares of plastic wrap. Then, with the tip of your finger, grease the plastic wrap with olive oil and place it in a cup as shown in the photograph.

7. Crack the egg on the oiled plastic wrap, add salt and pepper to taste.

8. Carefully close the plastic wrap and place the bags with the eggs in boiling water for 4 minutes. Remove them and open the plastic wrap.

9. Add the cooked chard to the pan where you have the onion and tomato sauce. Mix well with the rest of the ingredients and turn off the heat.

10. Serve the chard with tomato and poached egg on top. As you can see, it is a simple, forceful and flavorful recipe.
