Ingredients
– 300g of chicken breast
– 1 egg
– 1 tablespoon soy sauce
– 1 tablespoon of Chinese wine (worth white wine)
– 1 red pepper
– 1 green pepper
– 1 clove garlic
– 1/2 onion
– Cornstarch
– Salt
– Oil
Sweet and sour sauce ingredients:
– 150ml of water
– 30g ketchup
– 2 tablespoons soy sauce
– 1 tablespoon of rice vinegar (or wine if you don’t have one)
– 15g brown sugar
– 1 teaspoon cornstarch
Lets go cook
– We cut the chicken into more or less large cubes. A bit smaller than a bite size. We do the same with the onion and peppers. The garlic, we chop it very fine
– In a bowl we put the egg and beat it. Add the chopped chicken and add a pinch of salt. Then we add the tablespoon of white wine and soy. We mix well
– Then you can marinate this in the fridge for 4 hours to a whole day. But if you don’t want to, you can continue with the recipe without waiting any longer. Add and cover all this with a generous amount of cornstarch and mix well. You can also pass each piece of chicken through the cornstarch on a separate plate but, the cornstarch is very fine cornmeal, and it is a bit cumbersome for the hands to do so. That’s why I prefer to add it directly, even if we use much more cornstarch than the other way. It is more practical
– We put in the freezer so that the dough rests and meanwhile, we prepare the sweet and sour sauce that will accompany the chicken. To do this, we put all the ingredients of the sauce, except the cornstarch, in a pan. We heat while stirring frequently. We let it thicken for about 10 minutes and reserve
– Now, we can take the chicken breasts out of the freezer again. We remove the excess cornstarch and fry each piece in plenty of hot oil. When they are golden brown, we remove them and place them on absorbent paper
– In a wok or a large frying pan, add a splash of oil. We heat it over medium heat and add the minced garlic clove. Just when it begins to take color, we add the peppers, the onion and a small amount of salt. Mix everything well while we cook 3 more minutes.
– It is time to add the sweet and sour sauce. We also add a teaspoon of cornstarch, dissolved in 10ml of water. This is to thicken the sauce. Mix well and let cook a couple of minutes more, without stopping stirring
– We add the chicken. We mix all the ingredients again and serve immediately. This meal does not wait!
