Ingredients
- 1 package (6 ounces / 170 grams) lemon-flavored gelatin
- 1 package (6 ounces / 170 grams) strawberry gelatin
- 1 package (6 ounces / 170 grams) coconut flavored gelatin (made with milk)
- 1 can (12 ounces / 354 milliliters) evaporated milk
Preparation
- Place the unopened can of evaporated milk in the refrigerator.
- Prepare the lemon gelatin according to the instructions on the package except that you will only use 3/4 of the water indicated. For example, if they tell you to use 4 cups of water, make it with just 3 cups.
- Pour it into a flat container (for example, a pie pan or rectangular pyrex) and put it in the refrigerator for several hours until set.
- Repeat step 1 with the strawberry gelatin packet.
Only after the lemon and strawberry jellies have set well, prepare the coconut one: Heat a cup and a half of water to the boiling point. Take it off the heat and add the coconut gelatin powder. Stir it until the powder dissolves perfectly. Let it cool until it is slightly warm. - Open the can of cold evaporated milk and pour it into the coconut gelatin mixture. Stir until fully incorporated.
With a knife, cut the lemon and strawberry jellies into cubes of about two centimeters per side.
Refrigerate the molds for three hours or until the gelatin is firm. - Using a spoon or spatula, transfer the gelatin cubes to the mold (s). Pour the coconut gelatin (still runny) on top of the cubes and gently move a spoon into each mold so that both the cubes and the runny gelatin fit together well. You have to work a bit fast because with the cold of the gelatin cubes, the coconut gelatin will start to thicken soon.
- If it is not going to be eaten directly from the molds, your gelatin will have to be removed from the mold. To do this, run a knife around the entire mold so that the gelatin is detached from it. Wet a kitchen towel with very hot water and wring it out. Wrap the mold in the hot towel for 10 seconds (if the mold is metal) or up to 20 seconds (if the mold is glass or plastic). Placing a large plate over the open part of the pan, flip it over in one quick motion. If the gelatin comes off, remove the mold and admire the fruit of your work! If the gelatin is still stuck to the mold, repeat the entire operation with the hot towel, as many times as necessary so that it comes out easily.
