Ingredients
– 4 eggs
– 1 lemon yogurt
– The juice of 1 orange
– 180g of olive or sunflower oil
– 100g of sugar
– 200g of flour
– 12g baking yeast
– 1 pinch of salt
– 10-12 muffin molds
Lets go cook
Time needed: 30 minutes.
– We put all the liquid ingredients in a bowl, and mix them.
In a large bowl or container, put the eggs, the lemon yogurt, the orange juice, the oil and a pinch of salt, which will enhance all the flavors. We mix it well with electric rods so that all the ingredients are well integrated and a homogeneous mass remains.
– We add the solid ingredients, and mix again until everything is integrated.
Then, we add the sugar, and in a colander we put the flour and the yeast. We sift it little by little over the mixture and we stir it from time to time so that all the ingredients are mixed. When we finish adding all the flour, stir a little more until there are no lumps. We let this dough rest for about 10 minutes and we continue with the next step.
– Then, we fill the muffin molds with the dough we have prepared and bake it.
We cover the molds with curled muffin paper, and put in them the mixture that we have previously prepared. Make a good amount of dough in each mold without it getting full. Once this is done, we put the molds in the oven, previously heated to 180ºC. After 20 minutes, when they have browned, we remove them from the oven. To see if it is ready, we prick the muffins with a toothpick. If it comes out clean, the orange and yogurt muffins are ready to serve.
