Caesar salad

Ingredients

  • 6 romaine lettuce leaves
  • croutons to taste
  • 1/2 that
  • 1/2 teaspoon dijon mustard
  • 1/2 lemon, juice
  • Salt to taste
  • pepper to taste
  • 1 yolk
  • Olive oil to taste
  • 4 capers
  • splash Worcestershire sauce

Lets go cook

  1. Put the lettuce to soak with vinegar to disinfect
  2. For the dressing, in a bowl or mortar, mash all the ingredients except the egg yolk and olive oil.
  3. When they are all integrated, add the yolk and beat with a balloon whisk while adding the olive oil
  4. We are looking for a light mayonnaise type consistency. The ideal is to add Parmesan cheese but I didn’t have it at the moment.
  5. Brown the croutons on a griddle
  6. Dip the lettuce leaves in the dressing bowl and add croutons. Enjoy it!
