Ingredients
- 6 romaine lettuce leaves
- croutons to taste
- 1/2 that
- 1/2 teaspoon dijon mustard
- 1/2 lemon, juice
- Salt to taste
- pepper to taste
- 1 yolk
- Olive oil to taste
- 4 capers
- splash Worcestershire sauce
Lets go cook
- Put the lettuce to soak with vinegar to disinfect
- For the dressing, in a bowl or mortar, mash all the ingredients except the egg yolk and olive oil.
- When they are all integrated, add the yolk and beat with a balloon whisk while adding the olive oil
- We are looking for a light mayonnaise type consistency. The ideal is to add Parmesan cheese but I didn’t have it at the moment.
- Brown the croutons on a griddle
- Dip the lettuce leaves in the dressing bowl and add croutons. Enjoy it!
