Loin loin

Ingredients

  • 2 kilos of tenderloin
  • 150 grams of bacon
  • 150 grams of ham
  • Herbs … thyme, marjoram, bay leaf, oregano, pepper, paprika
  • 4 guajillo chilies
  • 8 pasilla chili peppers
  • 1 head of garlic peeled
  • 2 medium onions, sliced
  • 1/4 of peeled almonds
  • 1/4 of prune
  • Grain salt to taste
  • One liter of vinegar (pineapple)

Preparation

  • The loin is left to rest with all the spices, the garlic and the onion. At least one day.
  • The bacon, ham, chorizo, almonds, plums are fried.
  • And with this the loin is stuffed.
  • The spiced vinegar and the chilies are boiled, blended, passed through a strainer and with this the loin is covered.
  • Cover it, put it in the oven at 180 degrees for an hour approx. And it is uncovered and baked another hour approx.
