Ingredients
- 2 kilos of tenderloin
- 150 grams of bacon
- 150 grams of ham
- Herbs … thyme, marjoram, bay leaf, oregano, pepper, paprika
- 4 guajillo chilies
- 8 pasilla chili peppers
- 1 head of garlic peeled
- 2 medium onions, sliced
- 1/4 of peeled almonds
- 1/4 of prune
- Grain salt to taste
- One liter of vinegar (pineapple)
Preparation
- The loin is left to rest with all the spices, the garlic and the onion. At least one day.
- The bacon, ham, chorizo, almonds, plums are fried.
- And with this the loin is stuffed.
- The spiced vinegar and the chilies are boiled, blended, passed through a strainer and with this the loin is covered.
- Cover it, put it in the oven at 180 degrees for an hour approx. And it is uncovered and baked another hour approx.
