Baby chayote porridge

Ingredients

  • 400g chayote
  • A splash of virgin olive oil

How to make the chayote puree

  1. Wash the chayote and peel it. Remove the heart with the seeds and cut it into large cubes.
  2. Put the pieces in a saucepan and add water just to cover them (you don’t need to fill the saucepan with water).
  3. Put it on the fire until it starts to boil and cook over medium heat for about 20 minutes until it is tender.
  4. Once cooked, put the chayote in the blender glass and blend well. If it is too thick, add cooking water to taste to get a smoother texture.
  5. When it is lukewarm, serve it in a bowl, add a drizzle of olive oil and stir well. Now you can give it to your baby.

Tricks and tips

  • You can also combine it with carrot, pumpkin, apple or potato.
  • The chayote is in season between November and March, in those months is when it has the best flavor and is also cheaper in the market.
