Ingredients
- already seasoned tofu
- 1-2 Tbsp flour
- 1 tablespoon cornstarch or corn starch
- 2 Tbsp soy sauce
- 1 tbsp water
- 2/3 cup breadcrumbs
Dip
- ¼ cup wet cashews
- ¼ glass of water
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp garlic powder
- 1 clove garlic
- 2.5 Tbsp nutritional yeast
- 1 chopped olives
- sea salt
- Whole wheat bread to toast
Lets go cook
- We are going to need tofu already seasoned or white tofu (marinated in soy sauce or another sauce that you like, with smoked paprika and salt), to coat we are going to need cornstarch, soy sauce, flour, and bread crumbs. For the sauce we are going to need cashews, they must be soaked overnight or for at least two hours.
- Also a clove of garlic, capers or olives, lemon juice, nutritional yeast, salt, refined olive oil, and lettuce/salad. We are also going to need whole wheat bread. Cut bread into cubes and put them in a rectangular dish, drip with olive oil and season with garlic powder or herbs, whichever you like. We mix very well and we toast it at 180 degrees.
- While the bread is toasting, cut tofu in half and pat dry on a napkin. This tofu is already seasoned, if you can’t find one already seasoned, you can use the white one and marinate it in soy sauce, or other sauce, or smoked paprika. Tofu we cut into slices.
- Now we are going to prepare the dough for coating. Put cornstarch or cornstarch in a bowl, add 2 tablespoons of soy sauce and 1 tablespoon of water. Mix the sauce very well with cornstarch. We take a slice of tofu and coat it in flour, then in our cornstarch and soy sauce, (this we used instead of eggs) and lastly the breadcrumbs. Tofu with breadcrumbs we press very well so that it is fried better.
- Coat all slices of tofu. We fry in refined olive oil, I like this type of oil for cooking and frying. Tofu we fry on both sides. After frying we put them on the plate with a napkin, to remove the oil from our tofu.
- We start with the sauce: which is the most important part of our salad. To a blender we add cashews, capers or olives, garlic, 3 tablespoons of water, lemon juice, nutritional yeast, salt and olive oil. We crush everything until we have a creamy sauce, we add a little water, the sauce has to be thick, not too liquid. We keep shredding.
- Lettuce wash and cut or tear with hands and place in a large bowl. We add salt, I have himalayan pink salt and mix very well by hand. We let rest a bit. While resting, cut tofu into thick rectangles. Our bread cubes are already made, crispy and golden. We put them in a bowl.
