Wash, peel and dice the potato. Wash the leek and cut it into slices, discarding the green part.
Put the pieces in a saucepan and add water just until they are covered. Place the saucepan on the fire and cook for 20 minutes over medium heat. Check from time to time to make sure they don’t run out of water.
Once the potato and leek are cooked, add them to the blender and blend. Add the milk little by little until you achieve a smooth texture.
Add a drizzle of virgin olive oil and stir well. Let the puree cool until lukewarm before serving it to your baby.
Tricks and tips
Buy a variety of potatoes to cook. If there are many varieties of potato in the region where you live (Galicia, the Canary Islands, France, Peru, Ecuador, etc.) you can try different types until you find the one your baby prefers.
Instead of milk you can use the cooking water or unsalted vegetable broth.
To cook the vegetables you only need to put water to cover them. This way they better preserve all their nutrients.
